Cooking steps 

Step 1: Prepare the ingredients

  • Chicken: rinse with water then rub with salt and a little ginger, rewash with water to remove odors.
  • Wash the lemongrass, ginger, chili, and lime leaves, then divide them into 2 parts, one part crushed and the other minced.

Step 2: Make the dish

  • Marinate the chicken with 1 spoon of broth mix, pepper, and minced chili, ginger, lemon leaves, ginger slices, green onions for 30 minutes.
  • Put some crushed lemongrass, lemon leaves, and gingers inside the chicken to create a fragrant odor. 
  • Pour the salt in a pot to cover the bottom completely, then add half of the lemon leaves and lemongrass and put the chicken on top of them.

Note: Do not let the chicken touch the salt or it will be salty.

  • Add the rest of the seasonings on top and cover the lid.
  • Close the lid and start steaming the chicken on high heat for 5 minutes. Then turn down the heat and steam for 20 – 30 minutes more.
  • Turn off the heat, keep the lid closed and let it rest for 10 minutes.
  • Take the chicken out, check the temperature, and chop it into bite-sized pieces. Sprinkle some minced lemon leaves and it’s ready to serve.

Cooking steps 

Step 1: Prepare the ingredients

  • Wash the chicken through water then rub it with salt and a little ginger.
  • Rinse it again with water to remove odors.
  • Prepare a bowl of dilute salt water, cut the cabbage into small pieces and soak for about 5 minutes to remove dirt, then rinse again with water.
  • Peel the carrots, wash and cut them into thin strips.
  • Wash the cilantro and cut them into bite-sized pieces.
  • Chop the chili.
  • Wash the shallots then slice them thinly and fry them until golden.
  • Squeeze the lemon juice out.
  • Smash the roasted peanuts.

Step 2: Make the salad

  • Heat a pot of water and add 1 spoon of salt in to boil the chicken.

  • Make the salad: add 2 spoons of dressing in the shredded chicken and mix well. After that, add the cabbage and carrots in. Continue to add the rest of the dressing and mix everything together.
  • When you’re done with mixing, add the fried onions and the cilantro in.
  • Finally, take the salad out and put it on a plate, sprinkle the roasted peanuts and it’s done.

Step 1: Prepare the ingredients

  • Wash the chicken wings with water. Rub them with salt and ginger. Rewash them again with water to get rid of the smell. Let them dry.
  • Wash and mince the garlic, chili.

Step 2: Make the fried wings

  • Make the sauce: add 2 spoons of fish sauce, 2 spoons of chili sauce, 2 spoons of water, half a spoon of salt and 1 spoon of MSG in. Mix well.
  • Heat the pan with 2 spoons of cooking oil, wait for the oil to boil and start frying the chicken wings,
  • Once the chicken is crispy and golden, take them out to a new plate. Reduce the amount of oil, add the garlic and chili in. 
  • Add the chicken back and pour the sauce in as well.
  • Season the chicken wings to your liking and let it simmer to thicken the sauce.
  • Turn off the heat and stir them again to fully coat the wings.

Chicken curry with coconut milk, chicken and vegetables

Cooking steps 

Step 1: Prepare the ingredients

  • Wash the chicken with water, then rub it with salt and ginger. Rewash it with water to get rid of the smell and let it dry.
  • Marinate the chicken with 1 spoon of salt, 1 spoon of pepper, 2 spoons of sugar, 4 spoons of broth mix powder, 2 spoons of curry powder in 30 minutes to let it absorb the flavors.
  • Peel the sweet potatoes, wash and chop them into bite-sized pieces. Soak them in saltwater to keep the color.
  • Dice the onions
  • Add 6 cups of warm water into the shredded coconut and squeeze out the coconut milk. 
  • Wash and crush the lemongrass. Then tie them together.
  • Wash and mince the shallot, garlic, chili pepper, ginger.

Step 2: Cook the curry

  • Heat the pan with 2 spoons of cooking oil. Once the oil is hot enough, and the sweet potatoes in and fry until slightly golden. This will prevent them from crumbling while making the curry.
  • Next, fry the chicken on medium heat and turn down a bit to cook the inside thoroughly.
  • Heat a pot on the stove with another 2 spoons of cooking oil. Add the minced shallots, garlic, chili, ginger in and fry till golden. 
  • Then add the chicken and the curry oil in. Stir evenly to coat the chicken with the seasonings. 
  • Add the coconut milk, the lemongrass and close the lid. Turn down the heat to let the curry simmer.  
  • Once the chicken is cooked, add the potatoes and the diced onion in. Cook for another 5 minutes and begin tasting. 
  • Adjust the flavor to your liking and turn off the heat. 
  • Simply take some out and enjoy with bread or rice, or pasta if you prefer.
