Mom’s Cooking steps

Step 1: Prepare the ingredients. 

  • Wash the pork belly, drain the excess water, and cut them into bite-sized slices. 
  • Marinate the meat with some broth mix powder, sugar, salt, fish sauce, black pepper for about 30 minutes.
  • Peel the radishes, slice them and marinate with the meat for about 15 minutes.
  • Wash the chili, shallots, green onions, then mince them.

Step 2: Cook the dish

  • Heat the pan and add 2 tablespoons of cooking oil. Once the oil is hot, add 2 tablespoons of sugar and stir until it melts and becomes caramelized.
  • Add the pork belly, radishes, minced shallots, chili and braise until the meat is cooked. Add water until the meat and radishes are covered. 
  • Bring it to a boil and season to your liking.
  • After it boils, keep it simmering until the radishes are soft and the meat is tender. Turn off the heat, sprinkle some green onions on top and it’s ready to serve.

Fried Round Scads

Mom’s Cooking steps

Step 1: Prepare the ingredients.

  • Clean the round scads, rewash with saltwater.
  • Drain the excess water. 
  • Wash the garlic, chili peppers, and mince them.

Step 2: Cook the dish

  • Heat the pan and add oil until it can cover the fish. Let the oil boil. Then add the fishes in. Fry until the skin is golden and crunchy. Do not flip the fishes too many times or they will break.
  • Make the sauce: add 2 teaspoons of fish sauce, 4 teaspoons of water, 2 and a half spoon of sugar, 1 spoon of lemon juice, 1 teaspoon of MSG. Add minced chili, garlic to your liking and mix well. 
  • After the fish becomes crispy, take them out on oil-absorbing paper for a few minutes. Then you can serve it on a plate. Garnish the dishes with fresh herbs and some chili flakes.

You should eat fried round scads while it’s still hot because the fish will be soft and soggy when it gets cold.

Luffa Gourd Soup with Crabmeat

Step 1: Prepare the ingredients. 

  • Peel the sponge gourd, wash with water, and cut into bite-sized pieces. 
  • Sort through the jute plant and the Malabar spinach to get rid of the old, spoiled ones. Then wash them with water as well.
  • Pour water into the minced crab, use your hands to lightly squeeze the meat out. Filter the mixture through a sieve to remove residue.
  • Wash and dice the shallots.

Step 2: Cook the dish

  • Heat a pan, add 2 tablespoons of cooking oil and add the diced shallots once the oil is hot enough.
  • Add the crab eggs in and cook until there is a flavorful smell and the liquid becomes yellow. Pour it into a bowl. 
  • Pour the crab meat liquid into the pot and bring it to a boil. Once the meat is condensed on top, push them to a side so it won’t be scattered when we add vegetables.
  • Add the jute plant, Malabar spinach and sponge gourd in and cook for about 2 minutes, taste and season to your liking. After the vegetables are cooked thoroughly, turn off the heat and let it simmer.
  • Pour the soup into a big bowl and add the crab eggs on top.

The dish is ready for your family – steamy and cozy just like mom’s cooking.

Salted Vietnamese Eggplants

Mom’s Cooking steps

Step 1: Prepare the ingredients.

  • Dry the eggplants outside for about 5 hours to make them crispy.
  • Mix a bowl of diluted saltwater, cut off the stem, cut the eggplants into halves and wash them. 
  • After that, continue to make another bowl of saltwater to soak the eggplants for 2 to 3 hours.
  • Wash the galangal, garlic, and chili peppers. Next, mince them well.

Step 2: Salt the eggplants

  • Take the soaked eggplants out and wash with water, then let them dry.
  • Make the marinated sauce: add the minced galangal, garlic, and chili peppers into a big bowl, then add sugar, fish sauce, vinegar, and mix until you can taste the saltiness, sweetness, spiciness, and sourness of the sauce. 
  • Pour the marinade sauce into the box to soak the eggplants for an hour or more. They can be eaten right after marinating for 1 hour.
